Week 3: Neely's Baked Ziti

Dominic and I enjoy watching the Neely’s (Patrick and Gina) on The Food Network. I think Dominic likes their cooking because it is very "down home" and hearty. Those are the kind of meals he appreciates most! The Neely's are most loved for their BBQ, for some reason I only think to barbeque in the summer on the grill ... I might need to get out of that box and give one of their BBQ recipes a try in the near future. Might be a fun idea for Dominic for Valentine's Day, hmmm ....
This week I went for the Neely's Baked Ziti recipe. Since I have an Italian last name I feel called to master some Italian dishes. So far, it hasn't gone so well ... I make a mean bruschetta and have a great recipe for crockpot lasagna, but can't seem to get away from jarred pasta sauce. I don't think I'll be a real Italian until I get that under my belt! My father-in-law, Marlon, makes to-die-for chicken parmesan. I'm hoping that he'll gift me the recipe soon! It literally melts in your mouth. He also made manicotti for New Year's which was fantastic ... All that to say, I channeled him and Carmela from the Soprano's as I prepped this dish in my bright orange apron while dancing to the new John Mayer CD, Saturdays are such good days :)
Neely's Baked Ziti
Cook Time: 50 min
Level: Easy
Yields: 6-8 servings
Ingredients
Salt
1 pound ziti
1 pound hot Italian turkey sausage, casing removed
1 medium onion, chopped
3 cloves garlic, chopped
1 (28 ounce) can diced tomatoes
6 ounces pesto
15 ounces ricotta cheese
1 (9 ounce) package washed spinach
Butter, for baking dish
2 Cups shredded mozzarella, plus more for topping
1 1/2 cups grated Parmesan, plus more for topping
Steps
Preheat oven to 375 degrees F.
Bring a large pot of salted water to a boil over high heat. Add ziti and cook until al dente. Drain in a colander.
In a large skillet over medium heat, saute turkey sausage. Add onion and garlic and saute until the sausage is cooked through. Use your spoon to break up the sausage while it cooks. Add the can of diced tomatoes and pesto and let simmer for 10 minutes.
Add the ricotta cheese, spinach, Parmesan and mozzarella to a large bowl, and stir to combine.
Butter a 4-quart baking dish, add the cooked pasta, then sausage mixture and cheese mixture. Top with a sprinkling of mozzarella and Parmesan.
Bake until completely heated through and golden and crisp on top, about 20 minutes.
My 2 Cents
It has taken me 2 1/2 years to realize that Dominic and I do not need a full portion of any recipe.
No matter how good it is we don't like to eat it one night and have a week's worth of leftovers available to make us sick of the recipe! So, I cut this recipe in half and still ended up with enough to fill a 9x13 baking dish. The only modification I made was spurred by a coupon I had for Jenny-O products. I was at Safeway and they didn't have
hot Italian turkey sausage so I opted for the Italian Style Ground Turkey. The coupon was for $1 off 2 and Safeway had 1 lb. portions on sale 2 for $5. So I got 2 lbs of ground turkey for only $4! It worked out well since I hate to remove sausage casings.

"Good, but too many onions!" So I asked him how often he would like it, "Once a month for sure!" Phewf ... even though the onions were a turn off, turns out it wasn't a deal breaker!
I knew he wasn't going to like the onions so I minced them instead of just chopping ... looks like I didn't fool him :) I love onions so it is always my goal to incorporate them for flavor, but minimize the size so he can't really pinpoint if they are actually in the dish. I'm surprised he didn't balk at the tomatoes and spinach, but by the looks of his plate he was able to choke down those veggies! I've been telling him he needs to start enjoying his veggies, because once we have kids we aren't going to be having "That's gross!" conversations at the dinner table. All foods at least deserve a "thank-you bite".
